Preheat oven to 400 F. Prepare 12-cup muffin tin by spraying with pan spray or lining with paper liners.
Sift together flour, sugar, baking powder, and salt. Stir in bran. Add in ground flaxseed
Add remaining ingredients to blender, blend ’til smooth, and then add to dry ingredients.
Mix just until moistened (don’t overmix). Fill muffin tins almost full.
Bake at 400 F for 15 minutes, or until cake tester comes out clean.
Lay out slices of banana on top of PB
Lay out slices of strawberry on top of banana
Spread jelly/jam on other slice of toast
Put together and slice in half.
Enjoy with a glass of milk.
In another bowl combine 3/4 cup canola or veg oil, 3/4 cup peanut butter, 1 cup sugar, 1 cup brown sugar, 1/2 cup milk substitute, 2 tspns vanilla
Combine wet and dry ingredients
With a small ice cream scoop, scoop out mixture onto a greased bakings sheet
Cook until done
Ingredients – One Whole Wheat Bobili Pizza crust, 1/2 chopped eggplant (skinless), handful of mushrooms (chopped), 1/2 container of low fat ricotta cheese, Bunch of spinach (julienned), handful of basil (julienned), one egg, 2 tbs of pesto (optional), olive oil spray, vegan mozzarella cheese
Preheat over to 450 degrees per package directions
In a bowl combine ricotta cheese, spinach, basil, egg and pesto (optional)
Spray crust with olive oil spray
Spread cheese mixture to edges of crust
Add toppings of eggplant, mushrooms
Top with cheese to your liking
Place on pizza stone and into the oven it goes
Cook for 12-15 minutes or until cheese is melted
Remove and slice into 8 slices
