Breakfast is by far my favorite meal, or type of meal, at anytime of the day.  Yesterday, after posting my dinner on Instagram, I had an exchange about breakfast foods and how they are the best.  It was not too long ago that I could be tagged in all the waffle pics and recipes social media had to throw my way.  With my new job my breakfast is oatmeal and not waffles.  I am getting up between 4 and 4:30am to get a one hour workout in and then eating breakfast, shuffling the kiddo off to school and the amount of time I have to make waffles has decreased.  Really my time to even make omelets in the morning has decreased.  This means that breakfast type foods are now a part of my dinner, or brinner if you care to use that term.

The other change that has occurred since the new job has started is that I treasure my weekend breakfast meals even more.  A 4 or 5 hour ride, a 2 hour run are now followed by a smorgasbord of breakfast foods.  It seems as if I am making up for lost time.  Make some waffles, some french toast, some pancakes, an omelet and a side of fruit.  You would think I was feeding brunch to a cruise ship.

This got me to thinking about how breakfast foods play into my diet while training.  This of course led to thinking about which meals I have made recently would be considered my favorite.

Brussels Sprouts, Sweet Potato And Kamut Bowl Topped With Egg Sandwich
Frittata With Roasted Vegetables And Sriracha
Millet with roasted vegetables all topped with an egg.
Honey-Cinnamon-Raisin-Almond Waffles With Red Grapes
Sweet potato pancakes topped with garlicky red gravy and fried egg
Making breakfast puts a smile on my face and I think it is because the meal is so easy and simple to prepare regardless of whether or not you are making pancakes, waffles, french toast or just simple fried eggs and toast.

The flavors just work together and the nutritional benefit of getting in complex carbs, lean protein and healthy fats cannot be beat.
