The last month has been full speed ahead with racing Ironman Florida (race report here) and then Wild Hare 50 (race report here) two weeks later and registered for Isle Du Bois 52k two weeks post Wild Hare 50 had run my body into the ground. Endurance events take a lot out of you both physically and mentally and your immune system is shot. I learned this first hand Saturday into Sunday of this past week. I was feeling sluggish on Saturday but managed to do some running around (in the rain) with my wife but by the end of the day it had become f...

Recently I started a burrito kick and it has taken on a life of its own. It is at the point where I am now trying to get #BurritoWednesday trending since it seems that all the other days are taken not to mention the sheer ridiculousness of these hashtags. Also, please do not get me started on National Coffee Day or National Chocolate Day or National Non-GMO Gluten Free Sugar Free Fat Free Peanut Butter Day. The internet is a wonderful thing to have at our finger tips but some days I have to laugh at how days pick up momentum and thus why I am ...

Back when I was eating meat I could be found at the nearest bar or in my kitchen devouring wings by the dozens.  Yes, dozens. An afternoon watching football could easily consist of 50 wings, beer and an apple pie to finish the day.  When I made the lifestyle decision to become a vegetarian the one thing I missed the most was chicken wings on a Saturday or Sunday in the fall. That went away fairly fast when I began to use tempeh in my homemade buffalo sauce. As time has gone on I decided that anything and everything could get tossed in...

Karen and I have been using Hello Fresh for a few weeks now as a way to make time for each other during hectic work and training schedules. The recipes they provide are terrific and easy to make. The Freekah Sald has become one of our favorites and is one that has been made three times now. If you are unfamiliar with freekah then I suggest you get familiar with it and this recipe is a great way to use the grain. Freekeh has a slightly smoke and nutty flavor that seems pronounced in this dish. Probably because it is paired with the acidity from...

Some days getting into the kitchen and chopping, dicing, mincing and everything else that comes with making a meal is relaxing and allows me to exercise my creative gifts. Other days I want to get into and out of the kitchen faster than Andy Potts swim a half-ironman distance of 1.2 miles (which was 24 minutes at the 2015 version of Timberman). The reality is that my weekday evenings are my sanctuary to put my feet up and relax so the long cooking days are Saturday and Sunday. Thursday has also become a day in the kitchen as Karen and I ha...

I have a tendency to go through waves of eating. By this I mean that I will put my hooks into a certain type of food and not let go for a long time. A lot of the correspondence I have received in the past year has revolved around making waffles. I am still a waffle fiend but as times change and tastes change so do the meals that I prepare. I also love to make things easy in the kitchen. I do not have a lot of time during the week to create elaborate dishes and so I try to keep my cooking to 30 minutes or so. Sometimes that involves prepping be...

Chipotle peppers are a favorite ingredient in my kitchen. I absolutely love the smokey and spicy flavor of the peppers and believe they can bring just about any dish more life. Last night while I was riding my bike on the trainer I started thinking about what to have for dinner and my original thought was to have a TLT (Tempeh, Lettuce, Tomato) sandwich but when I opened the refrigerator it was like when Jules opened the briefcase in Pulp Fiction. The black beans shined like gold and then my mind started running. What goes good with black bean...

Taco Tuesday came early at my house yesterday but was disguised at Meatless Monday.  After I posted the picture to Instagram and finished licking the plate I realized that this was a dish that needed to have the recipe posted so that everybody else could enjoy the flavors that I inhaled in approximately 15 seconds.  Thus the reason why I was licking the plate…….I could not get enough of the tacos and may have to create them again for the actual Taco Tuesday. I had a desire to have Sloppy Joe’s after seei...

Japanese cuisine for me was non-existent until I tried sushi for the first time which happened about 15 years ago.  Like most people the idea of raw fish was not appealing.  I had not bothered to look into whether or not there was more to sushi and if Japanese cuisine could be enjoyed.  Like the word Kleenex meant tissue or Band-Aid meant adhesive bandage the word sushi meant Japanese cuisine.  As I grew up a bit and started to explore the world of food a bit more I realized that there was more to Japanese cuisine than sushi...

Fall is here, but if you live in Texas (or the South for that matter) you wouldn't know it as the temperatures have decided that it is closer to July 12th than September 12th.  Yesterday, when it was only 96* it felt like a cold wave had moved through.  That being said it is nicer to wake up in the morning and go for a ride or run and have to actually think about whether or not you want to wear arm sleeves.  [Disclosure: I am a cold weather wuss and if it is near 70* that early in the morning I make these decisions.  If it i...

Vegan buffalo wings were one of the first things I needed to figure out how to make when I decided to go plant-based.  For me the smell of the hot sauce accompanied by the creamy cooling effect of the bleu cheese dressing was going to be the one item I missed the most and so it was imperative that I be able to make vegan buffalo wings and make them fast.  The first time I made them I was in heaven.  They had the aroma and flavor but what surprised me the most of this vegan version was the texture.  I used tempeh along w...

Vegan risotto is not something you typically get excited about but while trolling through the multiple communities on Google Plus that I belong to I found a conversation regarding risotto and another regarding butternut squash.  I thought to myself that would be a great combination as the soft creamy texture of the butternut squash would go perfectly against the al dente texture of the risotto.  Along the way I saw crimini mushrooms in my refrigerator and the light bulb went off.  Why not add some crispy crimini mushrooms to add ...

Cornmeal pizza crust is what this turned out to be but that isn't what it started out as.  I made a socca earlier in the week and wondered if I could make a socca using cornmeal instead of garbanzo flour.  Before I tell you the rest of the story, do you know what a socca is?  Essentially, socca is a pancake made from garbanzo flour but it does not require baking powder, eggs or egg whites or anything other that water and oil.  Yes the two don't mix but when they are combined together with garbanzo flour there is a magic that...

Iron Chef, if you are not familiar with the show, is a cooking contest on The Food Network that started in Japan in 1993.  At the time there were 4 Iron Chefs that specialized in Japanese, Chinese, French and Italian cuisine.  These Iron Chefs would battle contestants who 'dare' challenge them in Kitchen Stadium.  I was fascinated because this program was a combination of cooking show with poorly dubbed martial arts programs.  It was like watching Bruce Lee in a kitchen.  The dishes that the Iron Chef participants ...

Polenta lasagna was inspired by a post I saw on PBS Food and knew within moments that I had to make this. Polenta lasagna is quite a bit different than your typical lasagna in that there are no noodles or red gravy. The dish that I created was 100% vegan where as your typical lasagna has cheese and lots of it. Even a vegetarian lasagna may have cheese in it but the polenta lasagna I created was dairy, gluten and wheat free. The beauty in making this dish was its simplicity while delivering big flavor. The original recipe is called Semolina Gnoc...

Quinoa and tofu is not something I typically put together as it seems like protein overkill.  There is 8g of protein per cup of quinoa while there is 10g of protein per 1/2 cup of tofu.  18g of protein in one meal would be nearly35% of the average needs of a man and that just seems like to much from one meal.  I avoided this combination forever until I saw a post on Instagram with these two combined and I thought that I should just give it a try and ignore the macros for just one meal as the texture combination see...

Navy beans are not something I cook with frequently and since I am an honest blogger that word should be never.  I picked up some dry navy beans a few months ago and used them when making a dish that included parsnips and mofongo thinking that I could make a black and white dish.  When I had them then I really enjoyed the taste and they seemed to quick much quicker than red kidney beans.  Recently while wandering the aisles of Sprout's Market I saw the bulk bin of navy beans and figured I would pick some up.  What I was goin...

Chinese takeout was a staple of my diet when I was a kid.  I can remember my mother going to the bullet proof (that is what we called it because they had bullet proof windows and passed food and cash through a slot) and coming home with fried rice, ribs with that sweet and sour sauce, chicken wings, beef and broccoli and General Tso's chicken.  Man alive I would dive headfirst into all of it and it always had the most wonderful aroma of grease and fat and all things unhealthy. Fortunately or unfortunately there is no such thing as a g...

Asparagus Risotto was voted as the recipe of the week on my Instagram feed and I couldn't have been happier to share this recipe with you.  As you know, maybe not if you live anywhere there has been snow fall lately, we are in spring and so it is time to dust off your favorite spring ingredients and make something that is in season and of course tasty.  For me, when spring comes I want asparagus and artichokes.  Seeing as artichokes were not available at the time of my grocery shopping I picked up a bunch of asparagus and de...

Incredible Hulk......remember him?  At this point The Incredible Hulk has been reduced to a supporting role in the superhero movies but back when I was a kid The Incredible Hulk, which starred Lou Ferrigno, was a show not to be missed.  I mean who doesn't go into fits of rage when people make you mad and make you want to rip off your shirt, turn green and have your jeans reduced to capris and then after you kick ass have all your clothes return to normal and your regular skin complexion come back as well?  I'd sign up for that. A...
