Taco Tuesday Recipe: Vegan Lentil Tacos

Taco Tuesday came early at my house yesterday but was disguised at Meatless Monday.  After I posted the picture to Instagram and finished licking the plate I realized that this was a dish that needed to have the recipe posted so that everybody else could enjoy the flavors that I inhaled in approximately 15 seconds.  Thus the reason why I was licking the plate…….I could not get enough of the tacos and may have to create them again for the actual Taco Tuesday.

I had a desire to have Sloppy Joe’s after seeing them on TV the night before but when I got home I did not have the patience to make the fried onion rings to place on top of the sloppy joe sandwich and thus the Vegan Lentil Taco was born or at least created.

Vegan Lentil Tacos

This recipe for vegan lentil tacos is versatile enough that it can be stuffed on a bun and turned into vegan sloppy joe sandwiches.

COOK TIME 1 Hour

  1. In a pot bring the 2 cups of water to a boil and add in the lentils. Reduce heat to simmer and cover. The lentils will absorb the water and take approximately 45-60 minutes to cook
     
  2. When there is about 15 minutes remaining in the cooking process of the lentils place the coconut oil in a cast iron skillet (this is a must) and melt.
     
  3. After the coconut oil has melted add in all the vegetables except for the garlic and olives. Allow the vegetables to cook and become tender which will take approximately 10 minutes.
     
  4. When the vegetables are tender add in the lentils, garlic, olives and spices. Allow to cook for another 5 minutes and then add in the crushed tomatoes
     
  5. The crushed tomatoes will be watery when they first hit the pan but the heat from the cast iron skillet will reduce the tomatoes until it forms a sloppy joe like consistency which will take about 10 minutes.
     
  6. Prepare your tortillas by warming them up so that they are pliable. When they are ready put on a plate and fill them with the vegan lentil taco filling.
     
  7. Add avocado and cilantro to the tacos along with anything else you like and be prepared to eat faster than you ever have before.
