Recipe: The Falafel Waffle

Falafel is one of my favorite foods and anytime I can get my hands on it I am going to take advantage. A couple of weeks ago Karen and I were talking about going to one of our favorite Greek restaurants for falafel but I got the idea that we can just make it at home and not have to use chickpeas to make it but rather garbanzo bean flour.

I had the flour, the parsley, baking soda and garlic so why not make them at home and instead of busting out the oil just using my trusty waffle maker. Then instead of just having falafel waffles we could make them into sandwiches and top it with a tzatziki sauce. My Mediterranean cooking inspiration was on high gear and it was time to get this party started.

Below is the recipe and it is super easy to make. You can use it for #MeatlessMonday or just whenever.

Falafel Waffle Sandwich

Love falafel? Love waffle? Why not combine the two with this easy to make ingredient.

SERVINGS 1
PREP TIME 20 Minutes
COOK TIME 10 Minutes

 

Ingredients

Falafel Waffle

  • 1 cup of garbanzo bean flour
  • 25g Onion (finely chopped)
  • 1 Handful Fresh Parsley (chopped)
  • 1 Handful Fresh Cilantor (chopped)
  • 3 cloves roasted garlick (chopped)
  • 1 tsp baking soda
  • 1/2 tsp cumin
  • 1/2 tsp coriander
  • 1 tsp salt

Sandwich Fillings

  • Sun-Dried Tomatoes
  • Sliced Pepperoncinis
  • Hot Cherry Peppers
  • Red Onion
  • Capers
  • Kalamate Olive Spread

Tzatziki Sauce

  • 1/2c Yogurt (I used dairy-free)
  • 1/2c Cucumber (diced)
  • 2 cloves roasted garlic (chopped)
  • Dill (chopped)
  • Lemon Juice

Instructions

  1. In a bowl add all of the falafel ingredients. Mix well and set aside for 5-10 minutes to allow the flavors to combine.
  2. Prepare your waffle maker according to manufacturers directions
  3. In a separate bowl all all of the tzatziki sauce ingredients and set aside.
  4. When the waffle maker is ready pour the falafel mixture and cook according to the directions.
  5. Remove and begin to assemble your falafel waffle sandwiches.
  6. On one side of the waffle begin by placing the kalamata olive spread (you can make your own by placing kalamata olives in a blender to creaet a paste) and the add the other indgredients.
  7. Top with a second portion of the waffle and top with the tzatziki sauce.

Notes

  • I served my falafel waffle sandwich with sweet potato fries but you can serve with couscous or a tabbouli salad
