Feeding An Ironman

Feeding an Ironman was something I conceived up a while ago and I have to say I have been horrible at keeping accurate tabs on my spending, but I do know I have been eating like a champion.  My meals are virtually all made from scratch and so I know what I am putting into my body on a regular basis.  I have also been using MyFitnessPal.com to help me track my calorie in and calorie out equation along with meal planning.

For example, Friday is always the toughest day for me because it is a rest day and I need to scale back my intake.  Last night I was looking at what I had planned for Friday and didn’t really like what I was looking at.  I started adding this and subtracting that and decided that I wanted to change-up my lunch which meant changing up my breakfast so that I could be within my calorie count for the day.  As I tweaked the meals I was generating more and more inspiration and thus that let me start to plan out next week’s menu.

Back to the Feeding An Ironman topic and you can see from the gallery below what I have been eating for the past week.  You will notice that I have a lot of waffles and the reason is that I went on a waffle streak.  I went 6 straight days of eating waffles.  Why?  They are easy to make, they provide me with the carbs and protein I need for recovery.  BUT the best part is that they are a great vehicle for other ingredients.  You typically see waffles as a breakfast meal, but you can see that I started adding in savory items.  Jalapenos, Spinach, Sun-Dried Tomatoes, Chickpeas.  I am working on the idea of an Italian waffle and hopefully I can get that going next week.
