Skinny Bitch: Ultimate Everyday Cookbook

This month’s cookbook club is reviewing Skinny Bitch: Ultimate Everyday Cookbook by Kim Barnouin.  Karen and I have a couple of other cookbooks from the Skinny Bitch family and I just knew that the recipes in this cookbook were going to be terrific.

As has become customary after I buy the book I sit down and circle the items that I would like to create and eat.  I then hand the book over to Karen and she circles her choices.  From there the ones that are circled by both of us are the dishes that I create, and as always add in a little touch of my own so they are not exactly what is in the cookbook but probably 90% of the recipe.

So far I have made 6 recipes and each one of them has been excellent.  Following you will get a review of the recipe along with a picture of the finished product and a video of how to re-create my version of the recipe.

Maple and Apple Cinnamon Pancakes

This was the first recipe I created and I just absolutely loved it.  I am a huge fan of breakfast and can eat it all day everyday.  I think I am my most creative w

hen it comes to breakfast and I think that is because it is the most important meal of the day (yes, your Mom was right.)

This dish had everything going for it.  The pancakes were fluffy, and the apple maple cinnamon was just like apple pie.  This combination was perfect.

Coconut Banana French Toast

Coconut Banana French Toast

Another terrific dish, and the only change I would make from my recipe is that I would use Brown Rice bread. The texture of Brown Rice Bread seems to hold up best for making french toast.  Neither of the dishes namesake were overpowering.  There was never a thought of this is too much coconut or too much banana.  It was perfectly balanced.

Tacos are a staple in our household

SooFoo Tacos with Fresh Salsa

I changed the recipe from Lenti Tacos to SooFoo because I was provided with this product to perform a review. That review will come tomorrow, but for now we are talking about the cookbook.  If you are a meat eater and like tacos, then try this on Meatless Monday.  The texture and flavor are present.  You could hear the mariachi band in the background these were that good.

Make enough fresh salsa to use for two dishes

 

Spicy Black Bean Enchiladas

We live in Texas and there is a Mexican restaurant on every corner.  You could trip and fall into one, but why buy when you can create?  I went through the cookbook after making the fresh salsa for the SooFoo Tacos because I wanted to use up the remainder of the salsa and found this recipe.  I made substitutions with this recipe and you can find those [HERE]

These enchiladas came out terrific and the only issue was I used the wrong size baking dish so I wound up with extra filling, but is that really a problem?  Use the filling to create spicy black bean tacos, or wrap it up and grill it on each side to create spicy black bean chimichangas.

Pumpkin Pecan Banana Bread

This was a no-brainer in our house.  Karen loves Pumpkin and anything pumpkin and I love bananas and anything banana.  There was something magical about this combination and I think it has to do with the pecans.  The extra crunch put it over the top.  The pumpkin did not overpower the banana nor did the banana overpower the pumpkin.

I added a little Honey Banana Nut Butter and put it in the microwave for about 15 seconds and that was all that is right with the world.

To date all of the dishes from the cookbook have been terrific.  Some better than others, as to be expected, but all in all a great start to the monthly cookbook club.  I have a lot of other recipes circled and will be posting another ‘menu’ similar to this and then a final cookbook review for all of you.
