Lunch - Chicken and Black Bean Hummus Quesadilla
PM Snack - Trail Mix from Hub Pages
Dinner - Red Snapper with Brown Rice, Beans and Vegetables
 
ATHLETE'S PLATE CHALLENGE
I noted in my blog yesterday that Diana of Diana Tries A Tri fame made me laugh so hard that I was dedicating the next Athlete's Plate to her and making it all vegetarian.  So after making that announcement I have come up with one dish.....Peanut Butter and Jelly.  But as Kovas pointed out to me we need an alternative to Peanut Butter and he recommended Sunflower Seed Butter and so there is my one dish so far, but I will create a perfectly vegetarian menu for the day.  I do have a week to do this you know.  Anyway, I want to challenge you to send me an idea and I will create a menu based on that.  It can be an ingredient, a theme, anything you want.  I love a good challenge.  I will run the menu by you once completed and then shout out your blog during the announcement of the menu for that day.  Great way for us all to share our ideas on food and pass the word so we all begin to eat healthier.

DAY 4 OF THANKS
On Day 4 of 30 of giving thanks for the people, places and things in my life (please notice the order in which they are listed.....it is important to me to live my life this way....people, places and things) I am thankful for the early morning training sessions in which I am able to be home to see my wife and step-son off.  This morning was a perfect example as Grandma picks up Chico on Thursdays and I had a short :30 run that I did with the Castle Hill Running Club.  I was home by 5:45am and Chico gets picked up around 6:30 so we had some time together.  On his way out the door Karen picks up Chico and they look in the mirror, hug each other tightly say....BYE-BYE then smile and laugh.  Great moment and so simple.  I then walk Karen to the car because according to her I did that when we were dating and she wants to keep it alive.  I like that.  Let's stay married as if we were still dating and trying to impress each other.  Let's not stop dating.
