#EnduranceFoodies Blog Carnival - Two Colored Meals Recipes

#EnduranceFoodies blog carnival for April is launching today.  If you don't know what the #EnduranceFoodies blog carnival is allow me to explain.  It was two months ago that I decided to start this project so that you, my readers, could get to know other #EnduranceFoodies and see more recipes than what I can present to you here. The #EnduranceFoodies are athletes who love to spend as much time in the kitchen as they do training and racing.  Since we all have different tastes and inspirations getting a group of like-minded people together to share in our passions was the goal.  When I started the #EnduranceFoodies blog carnival in March we had 5 people join in and then it grew to 10 and now I have 15 names on the list.  Not everybody participates monthly but it allows us to blog hop to find great recipes. The process starts with the kickoff/launch day, which is today, where I present the theme for the month along with my recipe.  Within the post you will find the links to the other #EnduranceFoodies participants.  As each day unfolds I update the links with the exact post of that participant, so I encourage you to bookmark the #EnduranceFoodies post and keep coming back so that you can click the link for the other meals. Now that the process has been explained I will let you know that this month's theme was two-tone meals.  Each #EnduranceFoodies participant could only pick two colors to use in their meals.  No other ingredients could be used if they were not of the two colors chosen when the email went out. I chose orange and green and spent a good two weeks trying to figure out what I was going to make.  By a stroke of luck I found green cauliflower on my weekly shopping and knew immediately what I was going to do.  I chose to make vegan patties with fries.  Who doesn't like 'burgers' and fries and when they are made like this you will most certainly be making burgers and fries more often.

#EnduranceFoodies Orange And Green Burger And Fries Recipe

Ingredients: 200g Green Cauliflower (pieces), 100g Butternut Squash (peeled), 1/4c Pumpkin, 100g Sweet Potato, 25g Spinach, Chives, 2 clovesGarlic minced (ignore the color....haha!) Servings: 1 Nutritional Information: 228 calories, 52g Carbohydrates, 1g Fat, 11g Protein, 14g Fiber Directions:

  1. Pre-heat oven to 405*
  2. Set up your steamer and place cauliflower inside to steam until soft (approximately 15 minutes.)
  3. Place peeled butternut squash into oven to bake for 30 minutes.
  4. Slice sweet potatoes into french fry shape and into a bowl with 1 tsp of olive oil.  Coat sweet potatoes and then place on baking dish and into oven for 20-25 minutes.
  5. Once cauliflower is soft place in bowl mash.  Remove butternut squash from oven and place in same bowl with pumpkin and mash then combine and form a two patties.
  6. Heat pan with 1 Tbsp olive oil and place patties down to get a caramelized golden color on each side.  Approximately 3-5 minutes each side.
  7. Remove sweet potatoes and toss into bowl with chives and garlic.
  8. Place spinach on plate then add patties and sweet potato fries.  Garnish with chives and serve.
