Polenta lasagna was inspired by a post I saw on PBS Food and knew within moments that I had to make this. Polenta lasagna is quite a bit different than your typical lasagna in that there are no noodles or red gravy. The dish that I created was 100% vegan where as your typical lasagna has cheese and lots of it.
